| One of the great joys of summer is moving your casual living outdoors. What better way to enjoy the weather than entertaining in your backyard. One of our favorite local chefs, Paul Sullivan of King Creole Catering, shares his best fish dish on the grill! |

| Grilled Swordfish Mediterranean |
| Ingredients: |
 |
4 Swordfish Steaks 8 oz. ea.
1 Cup Olive Oil
1 Tsp Oregano
1 Crushed Bay Leaf
Juice of 1 Lemon |
|
4 Garlic Cloves, Chopped Fine
2 Tsp of Basil
1 Tsp of Celery Salt
1 Tsp Coarse Black Pepper |

| Combine all ingredients except fish and butter in a bowl and mix thoroughly. Wipe each steak in the marinade to cover both sides and refrigerate for 3 hours. Turn once or twice to make certain steaks are well-coated. Grill the steaks over medium heat on a grill for 5 minutes, then turn and cook for 6 minutes. For a truly Mediterranean flair, garnish with 2 anchovy fillets to form an X and top the center of the X with a halved black olive. Drizzle with equal parts extra virgin olive oil and fresh lemon juice. |
